Karela Bhaja- Bitter Gourd Curry(dry)
Karela or the Bitter Gourd is of course bitter. But what if i just compress its bitterness and present it to you.
I always frowned whenever my mother prepared the karela/bitter gourd curry back home in India. But not any more. I found ways to minimize the bitterness and also thereby preserving the goodness of karela in it.
There are several ways this bitter gourd or karela is prepared. One of my favorite is the stuffed karela. I like it very much but it being too rich in fat ,i cook it occasionally. I also like the bitter gourd pickle which is not bitter at all and is quite tasteful. Apart from this there are famous south Indian bitter gourd masala chips, they are just awesome in taste.

Breakfast is the most important meal of the day as the body receives the first dose of food and water after 8 hours. It has a great impact on your day since the kind of breakfast you take decides the kind of meal you are going to have for the whole day. People taking regular breakfast tends to be less obese
and less diabetic as compared to people who skip their breakfast. In addition it keeps your stomach full and doesn't often makes you hungry, thus boosting your concentration and health.
Am on a mission to bring some extremely healthy and nutritious breakfast recipe, so that you can start your day with some quality food. To accomplish this mission i will be posting a series of breakfast recipe in this month. I have come up with this task for myself as i know many of my friends at present are skipping their breakfast and running for their work without chewing a single bit of food in the morning. I want to present this recipes to all of you with a hope to save you all from skipping your daily breakfast "The essential meal of the day".

Pollock Baked(Seelachfillet Baked)
First time i came to Germany, i started looking for a fish that was common to the area. After sometime i found pollock/Seelachs. I tried to cook them in several ways , sometimes i tried to fry them, sometimes i steamed them but it was best only when i baked them. I tried baking it several ways and in this post i will describe one of the easiest , quick and tasty way to treat Pollocks before they are on your plate. My son (1.5 Years old) likes it very much. Am happy for his choice since this fish is extremely light and nutritious. I am posting this on the request of my friend who is in Mauritius and wants a fish recipe.

Egg salad
Majority of my friends like hard boiled egg. I love them too. When i was a kid i would hear this add on the TV saying "Sunday ho ya Monday roj khayein Andey" , Which meant eat eggs everyday. These are rich source of protein and one should take them in their diet on regular basis. This recipe is also suitable for people on diet because its really healthy. There are several ways people consume the boiled eggs. In many parts of the world eggs are served as soft boiled or in poached form while in many other parts they are usually served in hard boiled form .
I believe that the environment, ecology and weather has a major impact on the food culture of a region and it is quite interesting to note that when you walk 40 km from a place you will find that the food culture has already taken a bent as compared to the one from where you started and as you proceed to walk on, and with each 40 km of distance you will discover a new cuisine and a new food culture,"Diversity" Isn't that amazing!!!.

Kidney Bean Salad/Rajma Salad
Summer has almost reached, and its time for some filling and soothing salads. What can be better than a kidney bean salad to celebrate spring. I can see the eagerness of the the buds to blossom, trees are swaying with beautiful small green coloured leaves, saying as if they are happy to be back again.
I am also liking the rise in temperature which makes me feel warm even when am outside . To celebrate such serene beauty of the Nature lets have some serene salad simple yet satisfying.

Kidney Bean Salad |

Preparation- 15 minutes

Ingredients:
- Kidney Bean- 1 can(250 g) boiled
- Carrot -2
- Lettuce leave
- Potato- 2
- Cherry tomato
- Zucchini-1
- Salt as per taste
- olive oil
- Yogurt or curd
- Herbs of your choice(Salat krauter)
- Freshly crushed Pepper cons
Preparation
- Steam potato , carrot, zucchini in a steamer by greasing the steamer with olive oil for 5 minutes. Slice the carrot , zucchini and potatoes.
- Shred the lettuce leaves.
- Grill the potatoes (Optional)
- Mix all the herbs and salt in the yogurt to prepare the dressing for the salad.
- Place potato, carrot , zucchini over a layer of lettuce leave on a plate.
- Over them place handful of beans and cherry tomato.
- Season with salt and pepper.
- Apply the yogurt dressing.
- Garnish with a slice of lemon and sprinkle some lemon juice and olive oil.`

Chicken Pizza , Murgh Pizza
Sunday evenings are real tough time for me realizing that its ending and standing Next is the boring Monday morning . To overcome such heavy thoughts i usually rush to my kitchen to prepare an amazing dinner that would leave me with a good feeling until next day. What could be a better idea of ending your weekend eating finger licking and mouth watering Chicken pizza. Its extremely easy to prepare and tastes like heaven. Thanks to my hubby because without him saying" Nah!!! " for dinner at some utterly boring pizza restaurant that night i would have never discovered this Dish.
Here's sharing you the Recipe:
Serves- 3 Medium size Pizza
Preparation- 30 minutes
Cooking time- 3 to 5 minutes for each Pizza
Level of difficulty- Easy
For the pizza base
- All purpose flour or pizza flour- 300gms.
- Olive oil- 2 Tbsp
- Salt- 1 tsp
- sugar- 1 Tsp
- Fresh yeast or any yeast- 1 to 2 Tsp
- Luke warm water- 200 ml
For the pizza sauce
- Chicken minced- 300 gms
- Garlic cloves- 10
- Onion- 1 large size, chopped
- Tomato puree- 100gms
- Tomato - 4 medium size , chopped
- Freshly crushed pepper and oregano
- Paprika powder- 1 Tsp
- Curry powder- 1Tbsp
- Salt as per taste
- Olive oil- 2Tbsp
- Mozerrela cheese
Preparation:
Pizza base preparation
- Bring together flour, salt, sugar, oil and fresh yeast or(in case you are using granules yeast, place them in the luke warm water and let them dissolve, use the same water to knead the dough).
- Now with the help of Luke warm water knead the dough.
- cover the dough with a wet towel and let this dough rise for 15 minutes.
Pizza sauce preparation
- Take 2 Tbsp of olive oil in a pan place the minced garlic. Now turn on the heat , once the garlic starts turning translucent add the onions and fry until translucent.
- Now add the chicken and salt fry until chicken is cooked. Add the curry powder, tomato puree and tomatoes. Fry until tomatoes are cooked.
- Once done adjust salt. Add the oregano and paprika give it a quick stir and turn off the heat.
Your Pizza sauce is ready now.
Pizza preparation
- By this time your pizza dough would be ready. Knock the dough and then take handfull of it. Dust it with flour and roll it flat in round shape. Quickly run a fork through out, making some marks here and there over the surface of the pizza base.
- Heat a tawa or pan, Place the base and wait until just little brown spot hits one side, flip and just heat the other side for 10 seconds. Take out of the pan.
- Preheat the oven at 220C and turn on the broilers or the grills.
- Grease each pizza base with olive oil before applying the pizza sauce.
- Place the mozerella cheese all over the sauce.
- Grease the baking tray with some olive oil and place the pizza on them
- Bake the pizza until the cheese are done. Take out and season with some pizza spices.
