Curry Würstchen(Sausage curry)

Its Christmas time and the place where i live in Germany is all set  with Christmas market. All over the market area theres lots of innovative lighting show that has been placed. This looks absolutely amazing.
In my visit to Christmas market i focused mainly on the food. Apart from Gluwien(Hot seasoned red wine) and Kinderpunch(mix fruit juices for kids) sausages are major consumed food during this season.

And once again am back with a Chinese cuisine. My love for Chinese dish will always remain the same.
Previously i posted Dry chicken chilly and here am posting it how to prepare it with gravy.
This dish tastes wonderful with rice and noodles as well. With gravy it is apt to serve as a main dish.

Prawn butter masala curry

I love prawns, but i hate to devein them. I just not only find it complex but more of a tedious process. Being said that i love the butter curry that is prepared with prawns. My hubby is not a great fan of sea food as he is more sensitive to the sea food smell. So before i cook any of those i make sure that i have put in all the ingredients that removes that typical smell.
 This time i brought king prawns and before i started cooking it, i marinade it with little spices and with the curry leaves. Later i tossed it in butter before i introduced it to my final curry. The fried prawns were as awesome. The butter and the curry leaves left some enchanting flavors on the prawns and it was nice and crunchy by that moment. However i quickly jumped up for preparing the curry and then my house was filled with aroma of whole spices, butter and curry leaves. Once i hopped out of my house i could still smell it when i passed by my window, lovely.
I am enjoying the fact that it is summer at my place and the sun sets at 10:00pm . This is like the best time of the year and i adore this moment. I quickly finish my dinner in the evening and go out for walk near parks and garden. It is very beautiful to admire the setting sun and the fleet of birds taking their flight back home. I wish it would remain like this as long as possible.

Chicken Curry - The Bangla Style

The Bengali Culinary art has always inspired my cooking. Say it like fish, chicken or any vegetable i often like to cook it the Bong way. This time it was chicken curry that i prepared. As i mentioned earlier a bong dish often has a dash of sugar to it for carmelizing the dish. I used the same principle in this curry too. 
The output of this recipe is superb. My husband was extremely happy with texture ,taste and flavor. While i was cooking the aroma was tantalizing. I am sure the readers of this post will find it extremely helpful to prepare chicken curry the bong way.

Chicken curry- Andhra style

Being a total chicken fan, i always hunt for ways to cook it differently. This time i searched for south Indian recipe and since i always ordered the Andhra chicken curry whichever restaurant we went in  Hyderabad , as i liked it a lot, so i decided to prepare in on my own this time.
To my luck i came out with a delicious and rich andhra chicken curry. I used poppy seed and coconut to prepare the gravy. I was surprised with the effects that this two ingredients had on my dish. It was more flavorful and the chicken curry tasted simply superb.
I know many of my friends like me are chicken curry fan, i dedicate this curry to them

Chicken meat balls with Spaghetti(Asian style)

I have always been fascinated by the pictures of meat balls lying over spaghetti. I never tried it with meat because of so many reason but then i realized i can simply do it with the chicken itself as chicken being low fat this would be better. I quickly went through the recipes of usual meat balls and then i knew how i was going to make it in Asian style with a little Indian touch to it.

Lamb Vindaloo is a famous Goan cuisine. This is basically a Portuguese dish, which Indians in Goa later customized. My hubby prefers lamb over chicken and since its a special day of ours i just asked him if we could sit back at home and i cook something special for him.

Coriander Chicken(Dhania Chicken)

I love using herbs in my food. It entangles the dish with some enchanting aroma. That is why i cooked up the herbs chicken. The herb that i basically used in this dish are the fresh bunch of green coriander leaves and a bunch of fresh mint leaves. To be straight forward i added the green chutney in the chicken . The preparation of green chutney is very simple but the taste that it imparts to the whole dish  is just unparallel.

Creamy Chicken and Mushroom pasta

My kid loves chicken dishes. Last night i decided to prepare something that's not spicy yet tasty and delicious . I have been preparing bechamel sauce  for quite a long time. So i decided using the same sauce for the chicken and mushroom. The dish came out really good and both my hubby and my son enjoyed it to the fullest. Matar Chicken(Green Peas Chicken)

My sister-in-law is a great cook. She always have some or the other great idea of cooking. This time she suggested me to prepare the matar chicken. At first i wasn't sure of this idea but as i proceeded i was happy to see the outcome. 
I have a kind of tendency to prepare food that are mostly influenced by the Bengali culture and cuisine though i myself is not Bengali. The reason might be i was born and brought up in a small town that lied on the border between the two states of India ...Jharkhand and West bengal called as Muri. I am lucky to be the one who had the opportunity to be a part of this beautiful  small place that lie on the banks of River Swarnrekha. I miss me no more staying there. I miss my childhood days that i spent there. The celebrations that no longer takes place and those dahlia flower that no longer blossoms as once they used to.

Dahi Chicken(yogurt or curd Chicken )

Dahi or yogurt is said to soften the flesh or meat. Indian preparations often incorporate the use of curd in number of non-vegetarian dishes as well as vegetarian dish. In this recipe i use yogurt to make the chicken soft as well as to enhance the flavors of the spices. I also use the spices in a particular way while marinating which makes this dish taste wonderful.

Spring Fritatta

The swaying little green leaves, wild flowers and all the trees in their best attire. Spring makes my world looks like heaven. Am happy for the fact that i can see some more vegetables over the racks in the groceries. My kid is going out in the park and is well enjoying with some water works that he does there. It's a great relief for me as am not use to such cold harsh weather but am use to some 40 C to 45 C. Next month i go back my home for some days. Month of may is said to be a terrible time as the sun is at its peaks in India and almost everything is fuming. People find out several ways to adapt themselves to such hot weather. In kolkata it's worse as its hot and extremely humid, you keep sweating and you go tried in just minutes. Am getting myself ready to fight with summer. But before the war begins i just want to enjoy the spring here in Germany to its fullest. Therefore i prepared some spring fritatta.  As the name suggests all colorful vegetables goes into this dish.

Pollock Baked(Seelachfillet Baked)

First time i came to Germany, i started looking for a fish that was common to the area. After sometime i found pollock/Seelachs. I tried to cook them in several ways , sometimes i tried to fry them, sometimes i steamed them but it was best only when i baked them. I tried baking it several ways and in this post i will describe one of the easiest , quick and tasty way to treat Pollocks before they are on your plate. My son (1.5 Years old) likes it very much. Am happy for his choice since this fish is extremely light and nutritious. I am posting this on the request of my friend who is in Mauritius and wants a fish recipe.

Egg salad

Majority of my friends like hard boiled egg. I love them too. When i was a kid i would hear this add on the TV saying "Sunday ho ya Monday roj khayein Andey"  , Which meant eat eggs everyday. These are rich source of protein and one should take them in their diet on regular basis. This recipe is also suitable for people on diet because its really healthy. There are several ways people consume the boiled eggs. In many parts of the world eggs are served as soft boiled or in poached form while in many other parts they are usually served in hard boiled form .
I believe that the environment, ecology and weather has a major impact on the food culture of a region and it is quite interesting to note that when you walk 40 km from a place you will find that the food culture has already taken a bent as compared to the one from where you started and as you proceed to walk on, and with each 40 km of distance you will discover a new cuisine and a new food culture,"Diversity" Isn't that amazing!!!.

Chicken Pizza , Murgh Pizza

Sunday evenings are real tough time for me realizing that its ending and standing Next is the boring Monday morning . To overcome such heavy thoughts i usually rush to my kitchen to prepare an amazing dinner that would leave me with a good feeling until next day. What could be a better idea of ending your weekend eating finger licking and mouth watering Chicken pizza. Its extremely easy to prepare and tastes like heaven. Thanks to my hubby because without him saying" Nah!!! " for dinner at some utterly boring pizza restaurant that night i would have never discovered this Dish.


Here's sharing you the Recipe:
Serves- 3 Medium size Pizza
Preparation- 30 minutes
Cooking time- 3 to 5 minutes for each Pizza
Level of difficulty- Easy

Ingredients:

For the pizza base

  • All purpose flour or pizza flour- 300gms. 
  • Olive oil- 2 Tbsp
  • Salt- 1 tsp
  • sugar- 1 Tsp
  • Fresh yeast or any yeast- 1 to 2 Tsp
  • Luke warm water- 200 ml
For the pizza sauce
  • Chicken minced- 300 gms
  • Garlic cloves- 10 
  • Onion- 1 large size, chopped
  • Tomato puree- 100gms
  • Tomato - 4 medium size , chopped
  • Freshly crushed pepper and oregano
  • Paprika powder- 1 Tsp
  • Curry powder- 1Tbsp
  • Salt as per taste
  • Olive oil- 2Tbsp
  • Mozerrela cheese
Preparation:

Pizza base preparation
  1. Bring together flour, salt, sugar, oil and fresh yeast or(in case you are using granules yeast, place them in the luke warm water and let them dissolve, use the same water to knead the dough).
  2. Now with the help of Luke warm water knead the dough.
  3. cover the dough with a wet towel and let this dough rise for 15 minutes.
Pizza sauce preparation
  1. Take 2 Tbsp of olive oil in a pan place the minced garlic. Now turn on the heat , once the garlic starts turning translucent add the onions and fry until translucent.
  2. Now add the chicken and salt fry until chicken is cooked. Add the curry powder, tomato puree and tomatoes. Fry until tomatoes are cooked.
  3. Once done adjust salt. Add the oregano and paprika give it a quick stir and turn off the heat.
Your Pizza sauce is ready now.

Pizza preparation
  1. By this time your pizza dough would be ready. Knock the dough and then take handfull of it. Dust it with flour and roll it flat in round shape. Quickly run a fork through out,  making some marks here and there over the surface of the pizza base.
  2. Heat a tawa or pan, Place the base and wait until just little brown spot hits one side, flip and just heat the other side for 10 seconds. Take out of the pan.
  3. Preheat the oven at 220C and turn on the broilers or the grills.
  4. Grease each pizza base with olive oil before applying the pizza sauce.
  5. Place the mozerella cheese all over the sauce.
  6. Grease the baking tray with some olive oil and place the pizza on them
  7. Bake the pizza until the cheese are done. Take out and season with some pizza spices. 
Serve hot and enjoy finger licking Chicken Pizza. Yummy yum yum.

Garlic Chicken baked


This is an amazing garlic chicken recipe. The dish always came out with bright colors and mouth watering taste. Its an awesome style of baking chicken specially when you have not much time to cook and also when you want to use minimal spices and ingredients in your food. There's more to this, yes we get baked potatoes and onions free with the chicken all cooked in masaledar juices of chicken, onion, garlic, butter and few spices. So lets get started


  • Serves- 4
  • Preparation time- 10 minutes
  • cooking time- 20-25 minutes

Ingredients:

  • Chicken - Whole (800-900 gms skin intact) or  4 leg pieces with thigh(skin intact)
  • Butter- 100 gms
  • Ginger Garlic Paste- 2 Tbsp
  • Salt as per taste
  • lemon- 1
  • Rosemary and other herbs of your choice
  • Pepper- freshly grounded
  • Cuury powder or curry paste- 1 Tsp
  • Potatoes- 4, sliced into quarters
  • Onion- 2 large size, sliced thickly
Method of Preparation:
  • Clean the chicken and pat dry with towel
  • In a bowl take the butter(soft not melted), add the ginger garlic paste, pepper, salt,Lime juice, rosemary and other herbs. Mix together and come up with a paste like consistency.
  • Rub this butter paste every where in the chicken. Place the paste inside the skin of the chicken, this will help chicken to absorb the flavors of spices and will keep it moist.
  • Preheat the oven at 200 degree Celsius or 400 degree Fahrenheit.
  • Grease the baking tray with butter
  • Cover the base of the tray with onion slices and potato wedges, season with salt and pepper
  • Now place the chicken over the onion and potatoes.
  • Cook it for 10 mins, take out and grease it with the juices that are released in the bottom of the tray.
  • Cook for another 10 minutes, check by poking a fork inside the skin near the leg, if it goes in easily and juices come out of chicken, it means your chicken is ready .
  • Let the chicken sit for 10 mins before you serve it. 
Your chicken is ready to be served, Enjoy !!!!!!

Chicken noodle soup, The Classic style

The snow c laded land , constant low temperature ,Kind of relaxed mood and old sad song in the background,  What do you prefer to have in this situation. I definitely enjoy hot chicken noodle soup , that do make your senses and belly happy while helping you to carry on your classic way of celebrating cold.
No doubt, Its chicken soup for the soul. I say so  because its simple, no complication. Its just chicken , noodles and veggies cooked in a clear soup. Enjoy your cold wintry days with this recipe.

Preparation time :10 mins
Cooking time: 45 mins
Serves- 4    



The classic chicken Noodle soup
Ingredients:

  • Chicken - 500 gms, boiled and chopped, or the leftovers will also do.
  • Carrots- 4 chopped
  • Onion- 1 chopped
  • celery- 4 sticks chopped
  • Egg Noodles- 400 gms
  • Pepper- freshly crushed
  • Salt as per taste
  • Oil for cooking
  • Vegetable bullion
  • Chicken stock - 700 Ml

Preparation:

  • If you do not have boiled chicken , boil it by adding the chicken in 1Ltr of water. Add salt while boiling. Strain the chicken stock and reserve it once chicken gets cooked. Let the chicken cool of , then chop it.
  • Heat oil in a soup pot.
  • Add in the onion , celery, carrot. Saute until they are soft , add salt to this.
  • Add  the chicken stock or vegetable stock, boil. Add the vegetable bullion or any other bullion cube of your choice.
  • Add the egg noodles once the vegetable stock is hot . Cook Noodle until it is la dent...cooked.
  • Add in the chopped chicken pieces, season with pepper and simmer for 2 minutes. 
Your chicken Noodle soup is ready to be served, serve it hot.  Enjoy Winter :-)
