Its -5 Degree celsius. Sun shines throughout the day but you can hardly feel its warmth. It's February and days are longer by an hour in the evening which definitely gives a lot of hope that Winter will pass by . Chilled wind makes it worse ,its then you desperately search for a cosy den. Not just a cosy corner but also comforting food to soothe the bruises of the winter soul. A hearty soup bowl could be a perfect remedy.
Nothing fancy was the idea, rather to create something from the locally available supermarket would best save the time. All that boring soup can be elevated to an interesting dish with few magic tricks. check out the magic.
This is quite an easy curry, something that can be prepared in no time. You just need some fresh vegetables like few florets of cauliflower, carrot and young french beans. Young peas also goes well in the curry , but addition of too many vegetables somewhat gets overloaded in the curry. Therefore, my suggestion is to keep it simple and plain.
After long long time i decided to prepare Idli. My friend who is south Indian has been giving me many tips to prepare the fluffiest of all the Idli. I followed her tips and few of my own instinct to achieve the fluffy Idli.
The basic idea is to ferment the batter. Fermentation requires a warm temperature and few catalyst enzymes. In this episode i used fenugreek as the catalyst and for warm temperature i warmed a bowl of water in the microwave, took it out and then placed the batter inside and allowed it to rise. In around 8 hours i received the excellent rised batter.

The Inspiration!!....
During my job interview in the year 2010, i was travelling to Chennai from Hyderabad with the famous Indian Railways. In my compartment the fellow passengers were from Chennai. For the dinner they were carrying with them the idli with fragrant chicken curry. For the first time i realised that idli is just not about chutney and sambar it can go very well with chicken curry. That day i decided that whenever i am going to prepare the Idli the conventional way i am definitely gonna pair it up with chicken curry.

And today was the day when i accomplished what i decided. Ladies and gentlemen with immense pleasure i would like to let you know that this recipe was a super duper hit. I loved it and i am planning to prepare this more often.

So presenting here tried and tested Idli recipe.

Ingredients:

Urad daal - 1 Cup

Arwa Chawal, pooni rice or basmati rice- 2 Cups

Ukri chawal, idli rice or boiled rice- 1 Cup

Poha, Flattened rice- 1/4 Cup

Fenugreek seeds - 10

Salt as per taste

Oil

Direction:

Soak Urad daal and the rice seperately.

Soak urad daal with fenugreek seeds in a vessel for minimum 5 to 6 hours.

Soak rice(arwa chawal and the boiled rice) together for the same time.

Once daal and the rice are soaked its time to grind them into fine paste. Grind the daal into fine paste. while grinding rice add flattened rice 5 minutes before grinding into the dame rice vessel.

Grind the rice into fine paste as well.

Mix both the rice and daal and place this batter in a warm place and allow it to ferment. This may take as long as 8 hours. Once the batter is fermented you can see it rise as well.

Steaming idli's

you can steam the idlis in two ways. One of the way is to use pressure cooker and the steel Idli mold. Other method is to use the microwave.

Before preparing Idli add salt to the batter as per taste. Now grease the idli mold and place 1 Tbsp of batter in the given area in the mold.

Microwave method: Add 1/2 Inch of water in the base vessel. Place the idli trays with batter on the base vessel. Next microwave in full power for exactly 3 minutes. Let this stand inside for 1 minute. after 1 minute take out and serve.

Pressure cooker method: Remove the whistle of the pressure cooker. Place 1 inch of water. Similarly grease the idli trays with oil and place 1Tbsp of the idli batter. place this mold inside the pressure cooker and cover the cooker and cook for 5 minutes. After 5 minutes pork a fork or tooth pick inside the Idli if it comes out clean your Idli is done.

Idli is usually served with sambhar and chutneys. But for a change it is also served with poultry and meat at times.

The spring is at its best at the moment, weekdays are mixture of both rainy and sunny days. I am loving the nature Here at Karlsruhe a lot. The blooming greenery all around is inspiring. So, inspired from the nature i thought to prepare a very small kitchen garden for my self.

It was last month that i sowed the seeds of Methi(Fenugreek), Dhaniya(Coriander) and Mint. This month i can see them actually growing and budding. The pleasure of growing a plant out of seed is immeasurable. You are always attached with that exciting moment where you wait for the seeds to crack and sprout, then you wait for them to grow into green and finally when they take the shape of the plant you are the happiest in the world.

When i was young my mother used to have a lavish kitchen garden. What not was there in , Okra, Eggplant, French beans, Broad beans, Coriander, Mint, Maize, carrots, peas, Spinach, potatoes and Arhar Daal.

Infact my mother won many competitions for her best kitchen garden. It was so exciting to gift a bag of garden beans to neighbour, Yes garden can bring you sense of pride and love. It can many times soothe your soul as well.

Methi is the fastest growing plant. its easy to sow and as well easy to reap.

How i grew methi.

Soil: Choose the best pot soil for your pot or garden. Methi can be best grown in loamy soil. It also requires a good soil drainage. Choose a sunny place or keep the pot in the sunny area.

Preparation: Take the regular methi seeds. Soak them overnight in water. Next day drain the water and place the methi in a cotton towel or in a piece of cotton cloth. keep the cloth moist and place this in a dark place in your house for germination. In one day you can see the sprouts coming up, its now the time to introduce them to the soil.

Place the methi seeds in the pot. do not overcrowd the pot. On the top of the seed lay a layer of soil. sprinkle water and wait the shoots to come up in a day or two.

Water the pot or the soil everyday. Do not water too much. The basic idea is to keep the soil moist but not soggy.

Wait and watch within a week you will see that the methi have grown to a 1 inch plant.

Allow them to grow for a month and then start harvesting.

Enjoy Gardening....

Its Christmas time and the place where i live in Germany is all set with Christmas market. All over the market area theres lots of innovative lighting show that has been placed. This looks absolutely amazing.
In my visit to Christmas market i focused mainly on the food. Apart from Gluwien(Hot seasoned red wine) and Kinderpunch(mix fruit juices for kids) sausages are major consumed food during this season.

The sausage that is made from poultry(chicken and turkey) is popularly called as geflügel Würstchen which i like to eat. But something that stole my heart was the Sausage Curry. I was so impressed with what a stall in the market area served me that the next two days i prepared the same at my home for Dinner. This a very simple yet totally mouth watering recipe. I did some tweaking with the ingredients and the result was wow.
To prepare this sauce we need some tomato sauce, pair of sausages and some hot dog bread.

This recipe serves -2
Preparation time- 5 minutes
Cooking time 10 minutes(sausage grilling + sauce preparation)
Total time- 15 minutes

Ingredients:

Sausages of your choice- 4 small size(i prefer geflugel or poultry sausage)

Tomato sauce- 5 Tbsp

Sugar- 2.5 Tbsp

Water- 200 ml

Onion/ shallot- 1, finely chopped

Garlic clove- 2 , minced

Curry powder(very very important)

pepper powder or crushed pepper

Direction:

Fry the sausages at medium heat by adding 1 Tbsp of butter to the pan. Fry until all the sides are light golden brown. Once done take out and cut into slice.

In the same pan add 1 Tbsp of butter. Add the chopped onion, season with salt and fry until onion is done. Now add the garlic and just toss once.

Add the specified amount of sauce and water and let this come to boil. Once it comes to boil add the sugar and cook until sugar dissolves. Once sugar dissolves your sauce is ready.

This hot and spicy curry helps in warming your body thereby refreshing your mood whilst you fight cough and cold. It has been one week since my whole family is suffering from cold . Chicken is said to warm up your body, so i myself devised the idea to have curry and soup both at the same time hence the name "Chicken shorba curry". I use a large amount of ginger and garlic in this curry which i chop finely but do not mince them. I add lots of pepper to it so that your throat receive the exact kick of hotness which will surely lighten up your mood. But you are always free to customize this recipe and balance the spices as per your taste.

Banana Blossom's curry are one of my favorites. My mother often prepared it fresh by plucking the fresh Blossom from the banana plant. Apart from the blossom the stem is also used in preparation of curry. Its little tedious cleaning the flowers from the blossom but its worthwhile as the curry has incredible taste.
Banana plant is the one whose every part is brought into use while cooking is done. Right from the stem, blossom. raw banana, raw banana's skin and the ripen banana. The leaves of banana tree finds a very important place as its leaves are used as plates. Yes dishes are served on the fresh cleaned banana leaves. I love this environment friendly idea of serving food. The food tastes even more tasty when its served on the leaves.

After cleaning of the blossom removal of the metallic taste remains one important task. This requires either soaking the chopped flowers in the turmeric water or in the edible lime water(Lime-Caco3 i mean{Pan wala chuna}). In india this lime is popularly called as "Chuna" and it is important ingredient while the beetle leaves are served(Popularly called as Pan).
Next time do not discard the banana blossom, try out this curry recipe and Enjoy. Trust me its worth while making.

CLEANING: Remove the red brown brackets ,separate the flower, then remove the pistil and the scale from each flower. After a certain point of time you will reach a stage where no longer it will be possible to remove the red brown brackets and separate the flower. At this stage simply chop the remaining part along with the cleaned flowers.

Place the chopped blossom in water. Add 1 Tbsp of turmeric and let this sit for minimum 8 hours before you start preparing the curry. Turmeric will remove the metallic taste from the banana blossom.

Next drain the water and place the soaked blossoms in the pressure cooker. Add 1 cup of water and then cook until 3 time the pressure is released in medium heat.

Let this cool off. Drain the water and squeeze away excess water.

Now heat 2 Tbsp of oil in a pan. Fry out the boiled potato first. In The same pan add 1 Tbsp of oil. Add the garam masala(whole spices), green chillies ,cumin powder, coriander powder and salt.

Fry until oil oozes out. Now add the potatoes and the boiled blossoms. Fry for minute or 2.

Methi k Parothe... I am sure many of you have your mouth water when i say this. Its all time favorite of many Indians. Methi has a widespread use in Indian kitchen and also the seed has lots of Medicinal properties.

The methi is said to be a boon for health both for men and women. It helps in easy labor, increases breast milk, also helps against acid reflux(Heart burn), its a aid for digestion, reduces cholesterol, helps in fighting diabetes, prevents colon cancer, nourishes hair and the list continues. Because of all this properties Methi (Fenugreek) finds a special place in Ayurveda.Source

Fenugreek is widely used for flavoring Indian curries as herb which is nothing but the dried form of the leaves which we call "kasuri methi".India is the largest producer of it and major part of it is grown in the western state of Rajasthan. The herb produces surprisingly wonderful flavor to the curry. Kasuri methi is must when preparing curries like kadai Paneer, paneer butter masala, chicken butter masala and many more recipes.

Recently my hubby found a fresh bunch of Fenugreek leaves at the Indian grocery over here. I was so happy to see it so fresh. I divided the bunch into two halves. With one half i prepared the flat bread while with the other half i prepared the Potato and methi stir fry. This was perfect with rice.
The basic idea to prepare the soft paratha(flat bread ) is to incorporate the leaves in the dough itself. Some like to use the uncooked chopped leaves while preparing dough. I prefer using blanched fenugreek leaves in the dough with a little addition of luke warm water which makes my parathas super soft and tasty.
Today is the festival of Teej. Hindus all over the world celebrate it. Today the women observe fast and tribute their worship to lord Shiva and goddess Parvati. It is celebrated for the well being of spouse, childeren, purification of body and soul as well as harmony in Married Life.
Teej smymbolizes the reunion of Lord Shiva and His wife Sati reborn as Parvati. It is only after lots of hardship and meditation that Parvati wins the heart of Shiva. Today was the day When Lord Shiva realizes that Parvati was non other than his wife Sati who is also known as Shakti(Power) of shiva and accepts her love and devotion towards him.
Women praise Goddess Parvati for her love , devotion and hardship that she carries out to win the Heart of lord Shiva. Today Sindur(vermilion ), heena, bangles, sarees and Bindi's are offered to Goddess Parvati.
Teej celebrates the victory of wife love and devotion towrads her husband which is an important factor in Hinduism-symbolized by the union of Lord Shiva and Goddess Parvati.
As a offering to Shiva and Parvati , i prepared the Rawa ladoo(semolina sweet). I also applied heena to get into the festivity.
