Carrot Cake

Its October and i can see that people are all set for the October feast out here in Germany. Back in India its time for Durga puja (Dusshera, Navratri). When i was a kid i would wait the whole year for this festival, Its a full on 4 days of energy pack festival in India. In west Bengal Durga pooja is celebrated with all pomp and show, you will be amazed with the number of pandals and the different styled Idol of Goddess Durga. Its time when the city of Kolkata is on the light show.
I have planned to visit the Pandal here in Stuttgart and pay my respect to the Devi Durga.

My son with his rapidly developing taste buds is showing a lot of interest with cakes. It took him seconds to finish this cake.

Morning cake, The Tutti Fruitti Cake

At times am extremely lazy in the morning and often end up skipping my breakfast. Sometimes i even do not fill like boiling milk or egg , these are times when i just want to relax and would not leave my couch at any cost. For such occasion i crave for a slice of cake. Oh gosh! i love cake and nothing can give a better start to a lazy morning than a fruit cake. Further, this cake always has a better chance to switch your lazy overly relaxed morning into so called Yactive Day!!!.

In India i always used to have the Packed cake, like Britania Marie Cake which came into variety of flavors. Since the time i left India i have been missing my type of Cake :-( Until recently when i discovered that i can bake one myself. :-) Tidddinggg .

I have baked a large cake to keep a check on my breakfast.I just do not want it to go void any more. Here's sharing you the recipe of the Tutty fruity cake.

Yield - Cake of 2 Pound or more
Preparation- 30 minutes
Cooking time- 20 to 25 minutes.
Level of difficulty- Medium

Ingredients:

  • All purpose flour- 225 gms
  • Sugar- 250 gms
  • Butter- 250 gms
  • Eggs- 5
  • Vanilla essence- 2 Tsp
  • Baking powder- 1 Tsp
  • Baking soda- 1 Tsp
  • Salt- 1/2 tsp
  • Tutty fruity- 1/2 cup
Preparation:
  • Sieve flour, baking powder and baking soda.
  • In a mixing bowl, bring together butter and sugar, whip until a smooth paste appears.
  • Add eggs one by one and whip the mixture with each addition.
  • Add the vanilla essence and salt.
  • Now incorporate the flour little by little in the batter and blend until a smooth dough is formed.
  • If you find your dough to be too tight loosen it by adding 1 to 2 tablespoon of milk in it.
  • Add half the amount of tuty fruity in the batter. Give it a fold once.

Preheat your oven  at 180 Degree
Line your baking tray with parchment paper or butter paper
Fill the baking tray only to 2/3rd of its height. You can transfer the rest of the batter into another baking tray. On the top of the Batter sprinkle the remaining tutty fruity.

Now bake your cake at 160 degree C for 20 to 25 minutes. After 20 minutes of Baking you can check your cake if it is done by inserting a tooth pick, if it comes out clean, your cake is ready. Take out and let it cool on the wire racks.

Slice and enjoy the tuty fruity Cake. :-)

Orange Flavoured Cake

Recently on Deepawali me and my hubby prepared the orange cake . It came out to be really awesome.
I  have been trying my hands on preparing the cake for so long time, i must say that orange cake is one that is appreciated by a large age group.

Ingredients:

  • All purpose flour- 3cups
  • Sugar- 2cups
  • Egg- 2
  • Butter/Refined oil- 1 cup
  • vanila Essence-1 tsp
  • Baking Powder- 1tbsp
  • Baking Soda- 1tsp
  • Cinnamom powder-1/2 t

For icing

  • Orange juice- 1cup
  • Whipping Cream -200ml should be very cold at the time
  • Hand mixer/Beater kept in freeze for 1 hour before whipping
  • Vessel in which we will prepare the icing should also be kept in freezer for 1 hour before.
  • Powdered sugar- 1 Tbsp

Baking :

  • Grease the baking tray with butter
  • preheat the oven at 180 Degree C.
  • Beat all the ingredients until you can see some bubble inside the mixture.
  • Place the mixture in the baking tray, give the tray some tap before placing it in the oven.
  • Place the tray in the oven at 150 Degree C for 25 minutes to 30 minutes.
  • Check the cake at 20-25 minutes, insert a toothpick inside the baked cake if it comes out clean take out the cake and let it cool off.
  • Once the cake cools off, cut it into two layers, remove all uneven layers.

Icing:

  • Whipp the cream and sugar until the milk ends up in a foam. With hand it will take around 1/2 hours and with electric beaters hardly 2-3 minutes.
  • Pour evenly the orange juice on all the layers of the cake.
  • With the help of the flat spatula start placing the whipping cream over the bottom most layer, spread evenly on the upper surface.
  • Place the other layer of cake over the whipping cream And again place the half of the whipping cream, this time cover the upper surface as well as the side surface of the cake with whipping cream.
  • Now place the left whipping cream in a cone, place a star tip at the mouth of the cone and make some good shapes at the edge of the cake or what so ever way you want it .
  • You can also place some choclate chips over them
  • Kiwi, strawberry, and orange looks really good when thinly sliced and placed over the cake.
  • Freeze  the cake for around 2 hours atleast before serving.
And thats how the Orange cake is Baked and dressed.
Thank you for reading my blog, Happy cooking, enjoy :-)
