My hubby kept asking me to prepare dhokla since last few months. It was high time to fulfil his desire to have dhokla. I prepared this dhokla in just 5 minutes. My mother always prepared the dhokla using rice and lentil. Each time she prepared it had great taste. I prepared this dhokla using Besan(Chick pea flour).
This Gujrati recipe is superb and tastes wonderful. I am looking forward to learn more and more Gujarati recipes as most of them are vegetarian and have wonderful taste. My mother and mother-in-law both love having vegetarian food, serving them some of the most delicious recipe will make both of them happy, this is what i aim at for the moment.
Yield- 1 Dhokla cake
Preparation time- 10 minutes
Cooking time- 7 minutes
Total time- 17 minutes
Level of difficulty- Very Easy.

Ingredients:
- Besan(Chick pea flour)- 120 g
- Semolina- 40 g
- Citric acid or lime juice- 1 Tbsp
- Salt- 1/2 Tsp
- Sugar- 2 Tbsp
- Eno Fruit salt or any fruit salt of same combination as Eno.
For tempering
- Oil- 1 Tbsp
- Mustard seed - 1 Tsp
- Red chilli
- Curry leaves
- Water
- Sugar- 2 Tbsp
For Garnishing:
- Coriander leaves
- Grated fresh coconut
Preparation:
- Bring together all the ingredients except fruit salt. Add water and make a consistent paste like batter. The batter shouldn't be too thin or too thick.
- Add the fruit salt and then give it a mix.
- Grease a microwave dish with oil. Place the batter. Cover the microwave dish with a microwave safe lid or cling foil.
- Place in microwave at high power for 4 minutes.
- After 4 minutes let it sit for 10 minutes. After it sits for 10 minutes, open the lid and insert a toothpick, if it comes out clean then dhokla is ready. Cut it in desired shape.
- Prepare for tempering. Heat the oil in a pan. once the oil is hot add the mustard seed and let it crackle. Then add the chilies and curry leaves. Add 50 ml of water and then the sugar. Let the sugar dissolve. Turn off the heat and pour this over the Dhokla.
- Now sprinkle coriander leaves and grated coconut over all the Dhokla pieces. Let it sit for 5 minutes and then serve.
