Am not a big fan of Eggplant dishes. But then i like the fried eggplants a lot. In the eastern (west Bengal) Part of India, majority of people prepare the "begun bhaja" along with the awesome "Khichuri". During pooja the pandal's distribute the bhog of Khichudi and begun bhaja which tastes awesome and is extremely Yummy!!. In this post i will let you know how to prepare the begun bhaja in Bengoli style.
Serves- 4 person
Preparation time- 5 minutes
Cooking time 10 minutes
Total time- 15 minutes

Ingredients:
- Brinjal or eggplant- 1 Large in size, sliced thickly
- Turmeric- 2 Tsp
- Salt as per taste
- Oil for cooking.
Preparation:
- Marinate the egg plant by adding salt , turmeric and 1 Tablespoon of oil to it. Keep it aside for 5 minutes.
- Heat a tawa or a skillet, Add 2 Tbsp of oil .
- Now place slices of eggplant over the tawa or skillet as many can get accommodated in a batch.(do not overlap eggplants while placing on tawa)
- Put the flame to low heat. Cover the tawa or skillet and wait for a minute or two.
- Once they get brown on the lower side , flip them . Cover and cook for minute.
- Repeat the process until all the egg plant slices gets cooked.
Enjoy your tawa Baigan or Begun Bhaja. :-)
