Carrot Cake

Its October and i can see that people are all set for the October feast out here in Germany. Back in India its time for Durga puja (Dusshera, Navratri). When i was a kid i would wait the whole year for this festival, Its a full on 4 days of energy pack festival in India. In west Bengal Durga pooja is celebrated with all pomp and show, you will be amazed with the number of pandals and the different styled Idol of Goddess Durga. Its time when the city of Kolkata is on the light show.
I have planned to visit the Pandal here in Stuttgart and pay my respect to the Devi Durga.

Anyways, last Monday i prepared the carrot cake for my hubby. Heres how we make it.

Ingredients:

  • All purpose flour- 2 Cups
  • Sugar- 1 cup
  • Vegetable Oil- 1/2 cup
  • Carrot- 350 g, Grated
  • Baking soda- 1 Tsp
  • Baking powder- 1/2 Tsp
  • Eggs- 3
  • Vanilla essence- 1 Tsp
  • Salt- 1 Tsp
  • Raisins- 1/2 cup
  • Cashewnuts- 1/2 cup

Direction:
  • Beat the egg and oil. Now add the sugar and beat well until it foams out into white paste.
  • Now add the shifted flour, baking powder, baking soda and vanilla essence. Beat well until everything gets combined well. Beat atleast for 5 to 8 minutes.
  • Noe add the carrot, raisins and nuts and fold with the help of spatula.
  • Preheat oven at 180Degree C.
  • Place the batter on a well greased Baking tray.
  • Bake for 25 to 30 minutes or until the toothpick comes out clean at the center of the cake.
  • Once done take out on a cooling rack and let this cool.
Slice and serve.

  2. October feast is also a big thing over here, mainly plenty of big glasses of beer and the fun. I have passed the age for it long time ago. Lovely cake, interesting flavors and got me excited. Its also a new version I have never made before yet I will try one of these days.
