French Beans and Potato Stir Fry Curry

French beans are one of my favorite vegetable. I really like them in noodles , spaghetti  and also in mix vegetable. But today i prepared the french beans with potato, the stir fry style. My mom prepares the beans curry which is always the best. I really like the beans curry gravy with chapati and rice.
My mom's kitchen garden bean plants where like super plants. On a plot of 2 meter square they yielded like 2 to 3 kilo grams of beans per day. Everyday i plucked them and i would also pluck some tender ones with a thought that the next day these plant doesn't make me work again so much. But to my dismay i had to just keep plucking them the other day also.I just miss my good old days and those super plants. Now i don't even get to see kitchen garden any more. These days like all i head to the supermarkets and grab a kilo of them at an obvious high rate.




Anyways lets take a look at the recipe.

Serves- 4
Preparation time- 5 minutes
Cooking time - 15 to 20 minutes
Total time- 25 minutes
Level of difficulty- Medium

Ingredients:

  • French Beans- 500 g, washed and then cut into 1 inch length.
  • Potato- 2 large size, peeled and cut into 1/2 inch cubes.
  • Onion- 1 large, thinly sliced
  • Tomato- 1 medium size, chopped
  • Green chilli as per taste(optional)
  • Oil-2 Tbsp
  • Paanch phoren or Cumin seeds- 1 Tsp
  • Salt as per taste
(Spices required)
  • Turmeric powder- 1 Tsp
  • Coriander powder- 1 Tbsp
  • Cumin powder- 1 Tsp
  • Pepper powder- 1/2 Tsp
Preparation:


  • Heat Oil in a skillet or kadai at medium high heat.
  • Add the cumin seed or paanch phoren and allow it to crackle.
  • Add the onions, fry until translucent.
  • Add the beans and potato, season with salt. Cover and adjust the heat to medium to low for 2 to 3 minutes. (Stir occasionally to avoid burning of vegetables) 
  • After  2 to 3  minutes you will see that potato and beans are like half cooked.
  • Add all the other spices. Fry for 5  minutes. 
  • Now add the tomatoes and fry until tomatoes are cooked completely.(Add little water if the curry goes too dry)
  • Once tomatoes are done, turn off the heat.
At this point of time your  French Beans and potato stir fry curry is absolutely ready to be serve.

Serve hot with chapati or as a side dish with rice.
